1 cup margarine
1 and a half cups of sugar
1 tsp vanilla
2 eggs
1 and 3/4 cups whole wheat flour
1 cup self raising flour
1 teaspoon bicarbonate of soda
2 teaspoons cream of tarter
half a teaspoon salt
- Cream together the margarine, sugar and vanilla
- Beat in the eggs
- sift the remaining ingredients and mix in well to the mixture.
- Roll into balls the size of a walnut and roll in: 2 tablespoons sugar and 1 or 2 teaspoons of cinnamon
- Place on a tray lined with grease proof paper and flatten slightly with the back of a fork
- Bake for 10 minutes
Once cooled these make a perfect ice-cream sandwich!
