Snickerdoodles

makes approx 5 dozen. Set oven to 180 degrees

1 cup margarine
1 and a half cups of sugar
1 tsp vanilla
2 eggs
1 and 3/4 cups whole wheat flour
1 cup self raising flour
1 teaspoon bicarbonate of soda
2 teaspoons cream of tarter
half a teaspoon salt
  1. Cream together the margarine, sugar and vanilla
  2. Beat in the eggs
  3. sift the remaining ingredients and mix in well to the mixture.
  4. Roll into balls the size of a walnut and roll in: 2 tablespoons sugar and 1 or 2 teaspoons of cinnamon
  5. Place on a tray lined with grease proof paper and flatten slightly with the back of a fork
  6. Bake for 10 minutes

Once cooled these make a perfect ice-cream sandwich!
