200g / 8oz butter
200g / 8oz cream cheese
200g / 8oz caster sugar
150g / 6oz plain flour
100g /4oz chopped dried apricots
100g / 4oz white chocolate chips
- Cream together the butter, cream cheese
- Add sugar and beat till fluffy
- Add in the flour and mix
- Stir in the apricots and chocolate
- Drop heaped tablespoons of the mixture onto prepared baking trays
- Bake for 15mins
- Cool slightly before transfering to wire rack
These are lovely hot or cold you can even keep them in the fridge and they still taste great!
