3 ripe bananas
1 cup of sugar
2 eggs
1/2 cup butter
2 cups self raising flour
1 teaspoon bicarbonate of soda
- Grease a large loaf tin or two small ones
- Mash the bananas and set aside.
- Cream the sugar and butter, until pale in colour
- Add the eggs and mashed banana and mix
- Sift the flour and soda into the mixture and mix together well
- Pour mixture into the tins and put into the oven for 25minutes
- Reduce the oven temperature down to 160 degrees and bake for a further 25 minutes
- Carefully remove from the tin and leave to cool.
