Banana Bread

makes approx 1 tin. Set oven to 180 degrees.
3 ripe bananas
1 cup of sugar
2 eggs
1/2 cup butter
2 cups self raising flour
1 teaspoon bicarbonate of soda

  1. Grease a large loaf tin or two small ones
  2. Mash the bananas and set aside.
  3. Cream the sugar and butter, until pale in colour
  4. Add the eggs and mashed banana and mix
  5. Sift the flour and soda into the mixture and mix together well
  6. Pour mixture into the tins and put into the oven for 25minutes
  7. Reduce the oven temperature down to 160 degrees and bake for a further 25 minutes
  8. Carefully remove from the tin and leave to cool.
