makes 6 generous servings
In a large saucepan brown 600g of lean minced beef
Add: 1 onion finely chopped
2 Red bell peppers finely chopped
500g grated carrots
1 teaspoon paprika
2 teaspoons fennel seeds
1 can chopped tomatoes
2 tablespoons Worcester sauce
1/4 pint of vegetable stock
2 cloves of garlic crushed
225g mushrooms thinly sliced
1 teaspoon oregano
2 bay leaves
1 teaspoon cinnamon (I often put in 2!)
1 tablespoon tomato puree
1 can red kidney beans
salt and pepper
If the chili seems a little dry top up with water.
Simmer everything for 30-40 minutes and serve.
