I'll write down what I use and the quantities, but it's very much a recipe to adapt to how many you're serving and you're own tastes.
1 bag Charlotte potatoes
5 hard boiled eggs roughly chopped
4 spring onions finely chopped
1 tin tuna drained
1 cup cooked wheat
4 large spoons of mayonnaise
3 large spoons of salad cream
salt and pepper to taste
1. Half the potatoes and boil in salted water until soft but firm. Drain and leave to cool.
2. Once cool place potatoes into a bowl and add eggs, tuna, spring onion, wheat, mayo and salad cream. Gently mix until everything is coated and mixed well.
3. Season to taste and refrigerate until ready to use.

Wholewheat Chapati
2 cups wholewheat flour
2 tablespoons oil
approx 1 cup warm water
1 tablespoon salt
3 tablespoons Oregano (optional)
you can flavour the chapatti's any way you want: parsley, chili, garlic, coriander etc....
1. Mix the flour and oil together well using your hands or a mixer
2. Stir the salt and herbs/spices into the water and add a little at a time until you have a soft, kneadable ball.
3. Knead for about 8-10 minutes (if using a mixer about 30 seconds)
4. Place the dough into a bowl and cover, let rest for between 30 minutes and 2 hours
5. Portion the dough into 12 (6 if you would like larger ones)
6. Dust with extra flour and roll into thin circles. (or if wanting mini chapatti's for dips etc... use a small cutter or bottle top to cut out the size you want)
7. Heat an ungreased heavy skillet or non stick frying pan over a medium heat.
8. Add the dough rounds and press down gently all over with a spoon to help make the chapatti's puff up. cook until lightly browned, flip and brown on the other side. repeat with all rounds.

2 cups sugar
1/2 cup vegetable oil
2 teaspoon bicarbonate of soda
1 teaspoon salt
2 eggs
2 cups Wholewheat flour
2 teaspoons cinnamon
1 cup nuts (optional)
1 cup raisins/ cranberry's etc (optional)
2 teaspoons vanilla essence

2 cups icing sugar
1/2 cup soft butter
4oz cream cheese
1 teaspoon vanilla essence
1. Place diced apples in bowl. Add sugar, oil,cranberry's, nuts, vanilla, bicarbonate of soda, salt and eggs and mix thoroughly
2. Sift dry ingredients together, then add to the apple mixture
3. Pour into a greased 9x13" pan and bake at 180 degree for 60 minutes
4. Leave to cool completely before adding frosting on the top.
To make the frosting:
1. Mix the butter and cream cheese until well blended together, add sifted icing sugar and vanilla and mix together till smooth.

Paella

200g long grain rice
1 tbsp olive oil
1 onion finely chopped
1 clove garlic crushed
1 tsp paprika
1/2 red pepper diced
400g tin chopped tomatoes
500ml chicken stock
1tbsp tomato puree
170g cooked prawns
170g cooked chicken
60g frozen peas
1) Rinse the rice in a colander and leave to one side to drain
2) Heat the oil in a frying pan and saute the onion until soft (about 5 mins)
3) Add the crushed garlic, paprika pepper and rice. Stir continually for 3 mins
4) Add the tin tomatoes and stock. Simmer for about 15 mins until the rice is tender.
5) Add the prawns, peas and chicken and mix well. Cook for another 2 mins before serving.

400g sweetcorn (tin or frozen)
650ml chicken stock
6 tbsp double cream
50g shredded cooked chicken
1 tbsp chopped parsley (optional)
1) Melt the butter and saute the onion for a minute or two.
2) Add the potato, sweetcorn and stock, bring to a simmer and cook until potato is soft
3) Blend half this mixture until smooth
4) Return it to the pan and add the double cream.
5) Season to taste and add in the chicken.
6) serve with a little parsley garnish.

Mapel & Oatmeal Loaf
makes 1 large loaf
1 and 3/4 cups water
3 tbsp maple syrup
4 and 1/2 cups strong white bread flour
1 cup wholemeal bread flour
2/3 cup rolled oats
3 tbsp oat bran
1 and 1/2 tsp salt
1 and 1/2 tsp sugar
1/4 cup butter
1 and 1/2 tsp easy-blend dried yeast
1 and 3/4 cups water
3 tbsp maple syrup
4 and 1/2 cups strong white bread flour
1 cup wholemeal bread flour
2/3 cup rolled oats
3 tbsp oat bran
1 and 1/2 tsp salt
1 and 1/2 tsp sugar
1/4 cup butter
1 and 1/2 tsp easy-blend dried yeast
- Place all ingredients into bread maker in the order listed and select basic/normal setting.
Pizza Dough
Makes 2 x 12" bases
1 and a 1/4 cups of water
4 cups strong white bread flour
2 tbs olive oil
1 and a 1/2 tsp salt
1/2 tsp sugar
1 tsp easy-blend dried yeast
1 and a 1/4 cups of water
4 cups strong white bread flour
2 tbs olive oil
1 and a 1/2 tsp salt
1/2 tsp sugar
1 tsp easy-blend dried yeast
- Place all ingredients in the same order into bread maker and start on dough setting (aprox 1 and a half hours.
- Once the cycle as complete, Place dough on a lightly floured surface and knock back gently.
- Set oven to 220 degrees. Prepare 2 trays
- Divide the mixture into 2, and with each piece roll it out to aprox 12" circle.
- Pizza is ready for toppings.
- Bake in the oven for 15-20 mins...serve immediately.
Suggested toppings
- blitz a jar of sun dried tomatoes in olive oil and herbs with a tin of chopped tomatoes for a base sauce
- tandoori chicken, sweetcorn, pineapple, cheese
- chili beef, onions, peppers, cheese
